Pathal, flat rice bread as brunch from God's own country..

Talking about one of the prime ingredients of the rice flat bread, fennel seeds have their own health benefits. Historical evidence of serving fennel seeds in silver containers for as mouth-freshener also claims its property of aiding in good digestion... Detoxification, homoregulation of hormones in the body are added advantages.. Anti-oxidant properties of fennel removes undesired free radicals from the body and acts against ageing, cancer and so on.


Recipe Ingredients:

Cooked rice : 2 bowls
Rice flour    : 1 bowl
Chopped onion : 1/2 bowl
Fennel seeds/ saunf : 1 tbsp
Salt to taste
Olive oil for frying

Procedure:
1. Use 2 bowls of cooked rice and 1 of flour. Add chopped onion, fennel seeds, salt, 3 tbsp of olive oil (any cooking oil) in a mixing bowl.

 2. Without adding a drop of water try to bring the dough together like this. While kneading the dough, let the cooked rice get coarsely ground. (like a grain into 4-5 pieces).

3. Make small balls, grease the surface (you can use the cleaned plastic covers or greased banana leaves) with little oil and flatten to a round shape using oiled fingers. Do not use water as the fried breads absorb lots of oil if dunked in it.
4. Heat oil to its maximum, and fry the flat breads for bout 4-5 min each flipping on both the sides till it gives beautiful golden brown color.
5. Put them on kitchen towels to absorb excess oil.
6. Crispy, rice flat breads are ready to serve with desired curry. Coming to food management, do you have rice in excess of previous night? Use it in pathal and eat fresh pathal with desired curry, may it be fish or egg in typical kerala style for your Sunday brunch.
